The Bellini is an Italian drink that was introduced by Harry's Bar in Venice, Italy. This was a popular spot for such expatriates as Ernest Hemingway and Orson Welles.
Bellinis are made 2/3rds sparkling wine, traditionally Prosecco and 1/3 white peach puree. Conveniently, we had about eight pounds of frozen peaches from Leigha's parent's tree farm. The trees on this farm are all under ten years old and few of them produce anything yet. Last year was the first year that we were able to get some peaches.
Once the peaches were dethawed, I made a simple syrup. Simply syrup is the easiest drink component to make. Add equal parts water and sugar and heat until the sugar has dissolved. Let cool. That's it. Deserving of its name.
Once the simple syrup is cooled, combine it with the peaches in a blender.
Blend.
Combine the purée with the sparkling wine and served in a chilled flute. We were hosting a dinner party and I thought that it would be perfect time to have this drink. I also figured that Moscato would be an acceptable alternative to Prosecco. As a non-wine drinker, I liked this drink a lot. For the kids, I got a sparkling juice for the kids. They always like it when they get to pretend to drink alcohol. I came to the conclusion that unless you are a kid, this might be too sweet unless you scale back the simple syrup.
